I've been trying to cook more exciting recipes in 2018. So far, so good. I ended up buying the Tone It Up nutrition guide to try and get my health in check and get inspiration for new recipes. It definitely worked and I have been loving what I've been eating! (Not to mention I feel better and I have more energy!)

So far, this recipe is by far my favorite. I've adapted it a little from the original recipe, but the idea is the same. It's simple to make and full of nutritious, whole foods. It's vegeterian, but could easily be made with meat (switch veggie patty mix for ground turkey) or vegan (just don't add cheese!).

Not only does this recipe taste amazing, but your kitchen will smell delicious too. The best part is, you can get all your mexican cravings in but not waste calories eating out at a restaurant! This recipe serves one (finally a recipe for single people!), so double it if you want to make more!

P.S. Valentine's day is coming up, and this is a surefire way to impress your date!

-1/2 cup diced onions
-1 tsp garlic
-1/2 cup black beans, drained & rinced
-1/2 cup veggie patty mix
-1 tsp chili powder
-1 large red bell pepper
OPTIONAL GARNISH: cilantro to taste, shredded Mexican blend cheese, jalapenos, avocados
  1. Bring a large pot of water to a boil. Cut off the top of your pepper and remove seeds, rinsing in water to make sure all seeds are out. Once the water is properly boiling, add bell pepper and cook for 3-5 minutes until softened, but not tender. When it's done, place in cold water and set aside.
  2. Heat a large skillet over medium-high. Sautee onions and garlic until tender, and the onions are lightly browned. Add veggie patty mix and chili powder.
  3. Once veggie patty mixed is cooked, add black beans and mix all together.
  4. Spoon filling into the pepper. Wrap in foil, and cook in the oven at 350 degrees for about 30 minutes, or until warmed and cooked all the way through. OPTIONAL: Add 1/4 cup of cheese before the pepper goes into the oven.
  5. Remove, and add toppings to your taste! Fresh pico de gallo and guac go great on this dish.

 No bell pepper? No problem! This can also be made with a zucchini (makes two servings). Follow the same steps, just skip the boiling at the beginning and no need to wrap in foil, just use a baking sheet.

  10. I like cutting my bellpeppers the other way because you get less filling but you dont waste any part of the bell pepper!
