VANILLA MATCHA MINI MUFFINS (NO SUGAR ADDED!)

I love these mini-muffins so matcha! 😉 I shared last week that mini muffins are some of my favorite morning snacks! They're perfect if you're on-the-go or want to spread out your snacks over a few hours to make them last longer (same).

These vanilla matcha muffins are no exception! Plus they're SO easy to make!

But first... what the heck is matcha? Great question! Matcha is basically the purest form of green tea. The matcha green tea is specially made in Japan, but before harvesting, it's grown in the shade for 3-4 weeks which gives it a beautiful deep green color.

The benefits of matcha include a caffeine boost without extra jitters like coffee, a metabolism boost, and a blend of ingredients that helps you focus. I like matcha in the morning to get me to lunch, and in the afternoon for a caffeine boost that doesn't affect my sleep.

Back to the muffins! Here's what you'll need:


1 cup almond flour
3 scoops protein powder (vanilla)
2 tsp Further Food Mindful Matcha (shop here for 10% off!)
1/2 tsp baking powder
1/2 tsp baking soda
sea salt
2 eggs
2 tbsp. melted coconut oil
1/2 cup almond milk
2 tbsp honey
1 tsp vanilla
1 cup greek yogurt




Directions:

1. Preheat oven to 350
2. Mix all dry ingredients together
3. In a separate bowl, mix together wet ingredients
4. Add wet ingredients into dry ingredients and mix until well incorporated
5. Pour mixture into greased muffin tin (I used coconut oil spray) and bake for 30 minutes or until a toothpick comes out clean
6. Let cool and then have a photoshoot with your muffins to show them off to the world! (just me?)
