WHOLE30 BUFFALO CHICKEN DIP

Buffalo chicken dip is easily in my top 5 (possibly even top 3) favorite dips of all time. I love it year round, but there's something about diving right into a casserole dish full of the cheesy goodness of it while watching sports that just makes everything better.




I decided to make some buffalo chicken dip this weekend for a couple of reasons:
  1. Weekends are typically when I eat out. Since I work from home, I don't really leave my house during the week except to go to the gym or get some groceries to make dinner. Since I'm doing a Whole30, my options for eating out in Oklahoma (land of burgers and cheese fries) are limited, and I want to save money! 
  2. I knew I would be watching like a LOT of basketball
Enter: whole30 approved BCD. Just enough of a treat to make it feel like I was indulging myself without breaking the rules of the program.


Now, I'll be completely honest. This recipe is not as good as regular buffalo chicken dip with cream cheese (and other cheeses) baked into gooey perfection. It's definitely more of a topping for things (baked potatoes, salads, spaghetti squash, etc.) than a dip to pig out on with veggies (because chips aren't W30!)

That being said, it's still good! It's still creamy and spicy and definitely a great way to mix things up, or take to a party/tailgate if you need to.

Here's what you need:
2 large chicken breasts, cooked and shredded*
6 tbsp W30 approved mayonnaise (make your own or use Primal Kitchen like I did)
3 tbsp W30 approved ranch (again, make your own or suck it up and buy the $7 salad dressing to make your life easier)
1/3 cup W30 approved buffalo sauce (I use Frank's Red Hot - and I like it SPICY. So be sure to start smaller if you're not a fan of spicy things. You can always add more!)
2 tsp. garlic powder
sea salt to taste

*I couldn't find a rotisserie chicken that was W30 compliant at my grocery store, so I just boiled 2 chicken breasts for about 20 minutes and then shred them with a fork. If you can find a rotisserie chicken that works (or don't care - whatever floats your boat!) feel free to just use 2-ish cups of shredded chicken instead.


DIRECTIONS:
  1. Mix together mayonnaise, ranch, buffalo sauce, garlic powder, and salt. Taste it to make sure it's spicy enough for ya!
  2. Fold in shredded chicken and mix until covered in the sauce.
  3. Bake in a casserole dish (9x9 or whatever size you want really it doesn't matter) at 350 for 30 minutes or until it bubbles around the edges
  4. Have a photoshoot for your Instagram and enjoy!
