PB&J CAKE DONUTS

Where my (creamy only) PB lovers at?! 🙋🏼‍♀️

Unless you're new here (hi!), you'll know that peanut butter is one of my all-time favorite foods. I've always loved it, and my dinner has been a spoonful of PB and popcorn more times than I care to admit. (But really - it's the perfect combination of fat, protein, and carbs. I stand by it. Thanks, Mom).

Peanut butter is also the only thing that has affected me post-Whole30, but as I said here, life is too short to not have peanut butter.

I was so excited for my parents to come to LA and bring the rest of my kitchen things (oh, and my bed) from Oklahoma because I have seriously been in the mood to bake recently! One of the things I miss most about my kitchen in Oklahoma was being able to get in the kitchen and try out recipes.


Enter: PB&J donuts. Yeah, you read that right.  The ultimate, rich, baked donuts that are flavored like a childhood classic. YOU'RE WELCOME.

They're also gluten, dairy, and refined sugar-free, so YOU'RE WELCOME AGAIN.

Oh, and one more thing, they're ready in 20 minutes. YEP, YOU'RE WELCOME A THIRD TIME. 😉

Here's everything you need to make the donuts:

1 egg
3 Tbsp melted (and cooled) coconut oil
1/2 cup unsweetened oat milk (I used Califia Farms)
1 tsp vanilla extract
1/4 cup peanut butter
1.5 cups gluten-free flour (I used oat flour)
1 Tbsp honey
2 tsp baking powder
1/3 cup berries

 

Directions:

  1. Preheat oven to 350 and grease your donut pan
  2. Combine wet ingredients in a medium-sized mixing bowl
  3. Add dry ingredients and mix well
  4. Fold in your berries
  5. Spoon batter (will be pretty thick)evenly  into your pan (I used my fingers to help form the donuts)
  6. Bake for 12-15 minutes
  7. Remove from oven and allow to cool
  8. Transfer to wire cooling rack
    • The donuts will crumble pretty easily since they're baked. The best way that I found to transfer them to the rack was to flip the pan over quickly and allow them to fall out on their own. This way too you have the pretty side of the donuts facing up
  9. "Glaze" with peanut butter and jelly or donut frosting/glaze of your choice and enjoy! Feel free to add more fruit on top if that floats your boat.
