WHAT TO EAT THIS WEEK vol. 1

Hello friends! Earlier this week, I shared my weekly menu and subsequent Trader Joe's haul on Instagram. I felt as though it was somewhat basic, but I got a lot of positive feedback on it and a couple of requests to share my grocery lists more often. So, why not make it a weekly series on the blog? 

Each Sunday I'll post my menu and grocery list to hopefully give you some ideas on healthy, simple meals for one person on a budget. I'll also link out to any recipes I'm using for inspiration. Read on for this week's list!


On these lists, you'll see a lot of the same meals used throughout the week. I tend to make things in larger batches to use for hopefully 3-4 meals: this saves on time AND money. I'm also pretty simple in the kitchen, I can eat the same things for a while and not get totally sick of them (most of the time).


As with everything, take what you want and leave what you don't. Enjoy!

Monday:
B: yogurt and granola bowl
L: turkey sandwich
D: sheet pan fajitas (recipe)

Tuesday 6/30:
B: egg scramble with tomatoes and mushrooms, served with 1/2 avocado
L: pesto zoodles
D: Greek-style turkey burgers (recipe)

Wednesday:
B: yogurt and granola 
L: turkey sandwich
D: sheet pan fajitas

Thursday:
B: avocado toast + egg
L: turkey burgers
D: pesto zoodles


Friday:
B: avocado toast + egg
L: pesto zoodles
D: sheet pan fajitas

Saturday:
B: yogurt and granola
L: turkey sandwich
D: turkey burgers

Sunday:
B: egg scramble
L: turkey burgers
D: leftovers



Snacks: green smoothies, pita chips + tzatziki, bananas

See below for this week's grocery list! This should last for about 2 weeks (With exceptions for eggs and the frozen fruit, which should last longer.)

PRODUCE:
  • Zucchini (pack of 3)
  • Potatoes
  • Mushrooms
  • Tomatoes
  • Purple onions
  • Bell pepper 
  • Yellow onion
  • Spinach
  • Avocados (3-4)
  • Bananas
  • Lemons
  • Frozen blueberries
  • Frozen strawberries
  • Frozen raspberries

REFRIGERATED:
  • Eggs
  • Feta cheese
  • Cashew Yogurt (3)
  • Turkey
  • Cheese (for sandwiches)
  • Feta cheese
  • Tzatziki

MEATS:
  • Ground turkey 
  • Turkey meat (I exclusively use Applegate Farms)

PANTRY:
  • Bread
  • Pesto (depending on the brand - at TJ's I get the vegan pesto from the fridge!)
  • Tortillas
  • Pita pockets
  • Pita chips
