WHAT TO EAT THIS WEEK vol. 2

Hi friends! Back this week with another sample menu and grocery list. This week we're having buffalo chicken lunches and Italian dinners. Simple, summery, and delicious!

As with everything, take what you want and leave what you don't. Hopefully, this list will at least give you some ideas! Enjoy!



Monday:
B: two scrambled eggs with salsa and 1/2 avocado
L: turkey sandwich
D: chicken, green beans, and potato




Tuesday:
B: avocado egg on toast
D: spaghetti squash with marinara, meatballs, and green beans 

Wednesday:
B: avocado toast with 1/4 avocado and an egg
L: buffalo chicken salad wrap with 1/4 avocado
D: bruschetta chicken with mozzarella and oven-roasted green beans

PREP: overnight oats




Thursday:
L: turkey sandwich
D: spaghetti squash with marinara, meatballs, and green beans 

Friday:
B: PB&J overnight oats
L: buffalo chicken salad wrap
D: bruschetta chicken with mozzarella and oven-roasted green beans



Saturday:
B: avocado toast 
L: buffalo chicken salad wrap
D: bruschetta chicken with mozzarella and oven-roasted green beans

Sunday:
B: scrambled eggs on toast
L: turkey sandwich
D: spaghetti squash with marinara, meatballs, and green beans 

SNACKS: pita and tzatziki, celery and PB, and carrots and hummus

Alrighty, onto the list!


PRODUCE:



  • Potatoes of choice (2-3)
  • Green Beans (2 bags)
  • Red Onions
  • Celery
  • Spaghetti Squash (large)
  • Roma Tomatoes (5)
  • Basil
  • Spinach
  • Avocados
  • Carrots


REFRIGERATED:



  • eggs
  • tzatziki
  • hummus
  • fresh salsa
  • mozzarella


MEATS:

  • frozen meatballs OR ground beef/turkey to make your own
  • frozen chicken
  • chicken breast OR chicken breast tenders

PANTRY:

  • bread
  • wraps
  • sugar-free marinara
  • pita chips
You may already have some of these in your fridge/pantry depending on last week! Again, take away what you don't need and add what you do.
